Apple Frit­ters

Ingre­di­ents
  • Water (warm) 2 cups
  • Yeast (dry active) 1.5 oz
  • Short­en­ing 5 oz
  • Sugar 4 oz
  • Salt .5 oz
  • Non­fat milk solids 1.5 oz
  • Eggs 4 oz
  • Bread Flour 2 lb 2 oz
  • Vanilla extract 4 tbsp
  • Apples peeled and diced 2
  • Ground cin­na­mon 2 – 3 tbsp
  • Apple juice (or water)
  • Veg­etable oil (for deep fry­ing) as needed
  • For Flat Glaze:
  • Icing sugar 2 lbs
  • Water as needed
  • Clear vanilla 1 oz
Instruc­tions
  1. Stir yeast into warm water and allow to rehy­drate for 5 minutes.
  2. Place yeast water, flour and all other ingre­di­ents into mix­ing bowl and mix until dough is smooth and satiny (approx 4-5minutes in kitchen aid mixer using a dough hook attachment)
  3. *** make sure that salt does not go directly into yeast water as salt will kill the yeast.
  4. Remove dough from mix­ing bowl. Place on floured sur­face and cover. Allow to rest for 20 minutes.
  5. Aggres­sively mix in diced apple, cin­na­mon and enough apple juice to keep dough moist. Keep mar­bled look.
  6. Cover and allow to rest for 20 minutes.
  7. Roll out dough to rec­tan­gle shape approx­i­mately 1” thick. Rest 10 minutes
  8. Cut into small rec­tan­gles 1 ½” x 2 ½“.
  9. Place on a floured tray, cover and proof until dough­nut rises approx­i­mately 50%.
  10. Deep fry to a deep golden brown and dip in flat glaze immediately.
  11. Allow to come to room temp and serve.
  12. For Flat Glaze:
  13. Mix icing sugar, vanilla and a lit­tle water to make a smooth paste and strain to make a smooth, thick glaze. Add addi­tional water to give icing the same con­sis­tency of fruit syrup (like that found in a can of peaches etc.
