Ingre­di­ents
  • 1 large chopped onion
  • 1 oz minced garlic
  • 2 large diced toma­toes (with juice)
  • 3oz ketchup
  • 2oz tomato paste
  • 1oz bour­bon or whiskey
  • 2oz cider vinegar
  • 2oz apple juice
  • 1oz pure maple syrup
  • oz brown sugar
  • 1oz dark molasses
  • oz worces­ter­shire sauce
  • oz dry mustard
  • oz ground cumin
  • To taste chipo­tle (canned with adobo sauce is very nice)
  • To taste salt and freshly ground black pepper
  • To taste smoked Paprika (at the end of cook­ing only)
Instruc­tions
  1. Saute the onion and gar­lic in oil.
  2. Add remain­ing ingre­di­ents and sim­mer until reduced and thick­ened. Adjust sea­son­ing and remove from heat.
  3. Add hot pep­pers or chipo­tle as desired to add heat and smoked flavour.
  4. Add smoked paprika if desired at the end of the cook­ing process.
