Bar­beque Side Ribs

Ingre­di­ents
  • 2 full sides pork side ribs, trimmed and cut to desired size
  • 1 large car­rots, diced
  • 1 medium onions, diced
  • 2 stalks cel­ery, diced
  • 2 tbsp cumin, ground
  • 1 tbsp oregano, dried
  • 1 tbsp curry pwd
  • 2tbsp whole black pep­per corns
  • 2 bayleaf
  • 2 chipo­tle pep­pers (more or less as desired)
  • 1 tbsp smoked paprika as desired
  • 1 oz Bour­bon or Whiskey
Instruc­tions
  1. Cre­ate a short stock start­ing with cold water and adding the mire­poix of veg­eta­bles (carrot,onion & cel­ery), and cumin, oregano, curry pow­der, pep­per­corns and bay leaf (to taste).
  2. Bring the short stock to a boil and add ribs. Bring back to a boil and reduce to a sim­mer. Allow to sim­mer until ribs are ten­der (approx 45 mins, depends on volume).
  3. Remove ten­der ribs from short stock and place in brais­ing pan. Cover ribs with Bbq sauce made from stock and braise slowly until ribs melt off the bone but keep their struc­ture. Approx 30 – 45mins 300°F (or more if required).
  4. Gen­tly remove ribs from brais­ing liquid.
  5. Degrease and strain brais­ing liq­uid through chi­nois (fine strainer), add bour­bon and chipo­tle as desired. Reduce the sauce to desired thick­ness and add smoked paprika.
  6. Cover ten­der ribs with BBQ sauce and place on hot grill/BBQ to caramelize (ribs can also be caramelized in a hot oven)
  7. *** Fin­ished sauce some­times need a lit­tle extra tart­ness due to fat con­tent of ribs. Add ketchup / apple cider vine­gar & brown sugar or maple syrup to adjust as desired.
