| Barbeque Side Ribs |

Ingredients
- 2 full sides pork side ribs, trimmed and cut to desired size
- 1 large carrots, diced
- 1 medium onions, diced
- 2 stalks celery, diced
- 2 tbsp cumin, ground
- 1 tbsp oregano, dried
- 1 tbsp curry pwd
- 2tbsp whole black pepper corns
- 2 bayleaf
- 2 chipotle peppers (more or less as desired)
- 1 tbsp smoked paprika as desired
- 1 oz Bourbon or Whiskey
Instructions
- Create a short stock starting with cold water and adding the mirepoix of vegetables (carrot,onion & celery), and cumin, oregano, curry powder, peppercorns and bay leaf (to taste).
- Bring the short stock to a boil and add ribs. Bring back to a boil and reduce to a simmer. Allow to simmer until ribs are tender (approx 45 mins, depends on volume).
- Remove tender ribs from short stock and place in braising pan. Cover ribs with Bbq sauce made from stock and braise slowly until ribs melt off the bone but keep their structure. Approx 30 – 45mins 300°F (or more if required).
- Gently remove ribs from braising liquid.
- Degrease and strain braising liquid through chinois (fine strainer), add bourbon and chipotle as desired. Reduce the sauce to desired thickness and add smoked paprika.
- Cover tender ribs with BBQ sauce and place on hot grill/BBQ to caramelize (ribs can also be caramelized in a hot oven)
- *** Finished sauce sometimes need a little extra tartness due to fat content of ribs. Add ketchup / apple cider vinegar & brown sugar or maple syrup to adjust as desired.
