Roasted Gar­lic Polenta

Ingre­di­ents
  • 1 cup veg­etable stock
  • 3/4 cup stone ground corn meal
  • pinch salt
  • 1 clove roasted gar­lic, mashed or minced
  • as needed olive oil
Instruc­tions
  1. • Boil the stock and add the salt.
  2. • Slowly stir in the corn­meal and stir for 5 min­utes adding a lit­tle more stock if needed to cor­rect the consistency.
  3. • Add the gar­lic and stir to incorporate.
  4. • Grease a 9 by 9 inch pan and pour the polenta into it. Cover the polenta with plas­tic wrap and chill it until it is firm and cool.
  5. • Cut the polenta into tri­an­gles of desired size. Remove the tri­an­gles from the pan, and paint both sides with the olive oil.
  6. • Pan fry each side of the polenta to brown and place the slices on the plate.
