| Roasted Garlic Polenta |

Ingredients
- 1 cup vegetable stock
- 3/4 cup stone ground corn meal
- pinch salt
- 1 clove roasted garlic, mashed or minced
- as needed olive oil
Instructions
- • Boil the stock and add the salt.
- • Slowly stir in the cornmeal and stir for 5 minutes adding a little more stock if needed to correct the consistency.
- • Add the garlic and stir to incorporate.
- • Grease a 9 by 9 inch pan and pour the polenta into it. Cover the polenta with plastic wrap and chill it until it is firm and cool.
- • Cut the polenta into triangles of desired size. Remove the triangles from the pan, and paint both sides with the olive oil.
- • Pan fry each side of the polenta to brown and place the slices on the plate.
