Ingre­di­ents
  • 8 fl oz dark soy sauce
  • 1 tsp sesame oil
  • 8 fl oz sake
  • 2 oz fresh orange juice
  • 1 ½ oz gran­u­lated sugar
  • 6 x 6ox Chicken breast, bone­less, skinless
  • 1 tbsp cornstarch
  • 1 tbsp sesame seeds
Instruc­tions
  1. Com­bine the soy sauce, sesame oil, sake, orange juice and sugar. Set aside approx­i­mately 8 fl oz for mak­ing the sauce.
  2. Brush the chicken with the remain­ing soy sauce mix­ture and grill over hot char­coal until done, bast­ing regularly.
  3. To make the sauce, com­bine 2 fl oz (60 ml) of the soy sauce mix­ture set aside for this pur­pose with the corn­starch. Bring the remain­der to a boil in a small saucepan and stir in the corn-starch slurry. Stir­ring con­stantly, con­tinue boil­ing until the sauce thick­ens. Sim­mer 1 minute.
  4. Serve each breast sliced and fanned out on the rice driz­zled with accom­pa­ny­ing sauce.
  5. Gar­nish with sesame seeds.
