Ingredients
- 1 cup all-purpose flour
- 1 teaspoon salt
- teaspoon ground pepper
- 2 large eggs
- cup milk
Instructions
- In a bowl, combine the flour, salt, pepper. In a separate bowl, whisk the eggs and milk together. Make a well in the center of the dry ingredients and pour in the egg-milk mixture. Combine well by mixing from the inside pulling the flour into the milk/egg and mixing thoroughly.The dough should be smooth and thick. Rest for 10 to 15 minutes.
- Bring a pot of salted water to a boil, then reduce to a simmer.
- Place a large holed colander over the simmering water and push the dough through the holes with a spatula or spoon
- Don’t overcrowd the pot or the dough will cool down the water and sink to the bottom.
- Cook for 3 to 4 minutes or until the spaetzle floats to the surface, stirring gently to prevent sticking. Dump the spaetzle into a colander and give it a quick rinse with cool water.
- Pan fry the spaetzle in butter until golden brown… top with gruyere or emmantaler as desired.
