Ingre­di­ents
  • 1 cup all-purpose flour
  • 1 tea­spoon salt
  • tea­spoon ground pepper
  • 2 large eggs
  • cup milk
Instruc­tions
  1. In a bowl, com­bine the flour, salt, pep­per. In a sep­a­rate bowl, whisk the eggs and milk together. Make a well in the cen­ter of the dry ingre­di­ents and pour in the egg-milk mix­ture. Com­bine well by mix­ing from the inside pulling the flour into the milk/egg and mix­ing thoroughly.The dough should be smooth and thick. Rest for 10 to 15 minutes.
  2. Bring a pot of salted water to a boil, then reduce to a simmer.
  3. Place a large holed colan­der over the sim­mer­ing water and push the dough through the holes with a spat­ula or spoon
  4. Don’t over­crowd the pot or the dough will cool down the water and sink to the bottom.
  5. Cook for 3 to 4 min­utes or until the spaet­zle floats to the sur­face, stir­ring gen­tly to pre­vent stick­ing. Dump the spaet­zle into a colan­der and give it a quick rinse with cool water.
  6. Pan fry the spaet­zle in but­ter until golden brown… top with gruyere or emman­taler as desired.
